Ajinomoto is a popular seasoning and flavor enhancer used to enhance umami flavors in sauces, broths, soups, and other foods. It is the trade name used for the monosodium glutamate (MSG) product.
It is the sodium salt of glutamic acid and is naturally found in tomatoes and cheese. It is used in soups, ramen, gravy, stews, and savory snacks. It is prepared by hydrolysis of vegetable proteins with hydrochloric acid to disrupt peptide bonds.
The safety of using Aginomoto in food items is always questioned. As per Food and Drug Administration (FDA), it is safe for human consumption but in normal conditions and at a specific range.

But there are some side effects of consuming Ajinomoto on regular basis.
- It causes serious headaches as it triggers minor cerebral pain.

- It can cause sudden fluctuations in heartbeats.

- It causes sweating.

- It causes numbness, tingling, or burning sensation in the face.

- It can cause chest pain.
- It can cause nausea and weakness.


Ajinomoto contains glutamic acid which functions as a neurotransmitter in the brain. It stimulates the nerve cells to release signals. Increased level of glutamic in your brain can cause harm but the dietary glutamic acid does not cross the blood-brain barrier (BBB) and cannot increase the level of glutamic acid in the brain causing no harm to the brain. It does not cause any harm when consumed in normal amounts. If the concentration of MSG increases it can cause all the above health problems. As everyone says " Extremeness of everything is bad” so you should consume Ajinomoto in minimum amounts and should eat a healthy and balanced diet that will keep your body healthy.
